Wild Blackberry Cobbler

2 cups wild blackberries
1 cup sugar, divided
1 cup bisquick
1 cup milk
1 stick butter, melted

Rinse berries in cold water & drain.


Spray casserole dish with cooking spray and preheat oven to 350.

Mix 1/4 cup sugar with blackberries and set aside

Mix rest of sugar with remaining ingredients and pour into casserole dish.  Spoon berries on top but do not stir. 



Bake at 350 until golden brown, about 45 minutes.  Serve warm. Tastes great alone or serve with ice cream.

Easy Fruit Salad

2 large cans fruit cocktail
1 regular can (15 oz?) very cherry fruit cocktail
1 can (15 oz?) mandarin oranges
1 jar maraschino cherries
1 small can pineapple chunks, drained
1 small can peach slices, drained
1 cup (or to taste) English walnuts, chopped
1/2 box french vanilla pudding mix (not prepared)

Combine fruit and nuts. I included the juice from most but not all of the canned fruit. Add dry pudding mix (I used about half of a regular-sized box) and mix well. Refrigerate. Best after it sits overnight.

You can use pretty much any kind of fruit you like. I used what I bought at the store then added some more fruit I found in my pantry. You can also make it with fresh fruit. I call this "easy" because I even purchased the nuts already chopped, so all I had to do was combine the ingredients.

Kathi's Peach Cobbler

5 Tablespoons butter
1 cup self-rising flour
1 cup granulated sugar
3/4 cup milk
1 large can cling peaches in HEAVY syrup

Melt butter in 2 qt., deep casserole dish. In separate bowl, mix flour, sugar and milk. When butter is completely melted, pour flour/sugar/milk mixture into center of butter. Pour can of peaches into center of flour/sugar/milk mixture.

Bake 1 hour at 375 degrees F.

Mom's Fruit Salad

2 large cans fruit salad
1 small jar cherries
1 small pkg. English Walnuts
1 banana, sliced
1/4 pkg. mini marshmallows
1 small can mandarin orange slices (Jamie's addition)

Combine all. Let sit overnight. Serve cold.
